In the mid eighties a bison rancher from around Chetwynd B.C. forgot to close the gate to his corrals. The two bison bulls inside took advantage of the situation and with freedom in mind, left the corrals heading east into Alberta. Around the same time I had a job with Agriculture Canada, driving to Beaverlodge every day. One morning I was amazed to find two bison bulls grazing next to our farm! Not only were they still there when I drove home but they continued to stay for several weeks! Their incredible size, majestic appearance and obvious appreciation of the area kept me thinking that perhaps one day I might consider raising them. A trip to Head Smashed In Buffalo Jump in southern Alberta confirmed that this was a wise thing to do. In 1992 our first six bison heifers arrived. Almost a dozen years later I have never regretted the decision. Now I'm glad to share them with you! |

Cooking Buffalo?Recommendations:Use lower cooking temperatures for cooking buffalo because buffalo is extra-lean. Buffalo will cook to desired doneness more quickly than other red meats. For best results cook steaks and roasts to rare 135F (57C) or medium rare 145F (62C). Do not cook beyond medium 155 F (68C).
